Not much to report today, so here’s the food:
Breakfast: Pepperoni pizza zoodles (I made fresh zucchini noodles to go with the sauce from a couple days ago)
Lunch: The bacon-wrapped pork tenderloin with brussels and 2 fried eggs. This is a great example of repurposing different leftover bits to create a pretty cohesive dish. I think I may plan this exact thing for a future brunch.

Dinner: A giant vegetable stir-fry with the last of our ground pork from the 1/2 hog we purchased from a local ranch. Sorta like all the filling of an egg-roll, just served over rice (cauliflower rice for me, organic white rice for the husband). I usually avoid taking pictures at night (food pictures just turn out so much better in daylight), but I’m trying to be more consistent at adding something visual to each post. It’s not the best picture, but it was damn tasty.
Daily Steps: Today was a rest day as far as weights go, but it was pouring rain this afternoon so I went to the gym just to use the cardio room. By the end of the day, steps were at 9960 (well past my 8ooo goal, yay!). I can see that upping my goal to 10k will push me just a little farther, and I think that will be perfect. So far getting about 20 minutes of cardio after work has made a big difference for me. I wish the weather was more cooperative so I could walk/hike outdoors, but for now the treadmill is doing the trick.
