No news, crazy Monday. Here’s the food, along with nice reminder to keep at it, even when life derails a little.
Breakfast: Two cups of steamed broccoli with the last of my asian pork sti-fry. I love pouring stir fry over veggies instead of rice, and the saucy bits flavor the veg so it all tastes delicious.
Lunch: Schedule was all kinds of weird today, and I never had lunch. I did, however, have a million handfuls of the Grain Free Banola that I made over the weekend. Not my most shining moment.showbox not working
Dinner: We revisited my roasted herb turkey breast, this time with baked potatoes (half of a small one for me, 1.5 for the husband), a scoop of ghee and a light gravy I made from the pan drippings and onions, thickened with a tiny bit of arrowroot. I will definitely keep this herbed turkey in my rotation; it’s economical, makes enough to last several meals, and is really easy to repurpose so you don’t feel like you’re eating the exact same thing each time. I rounded out our plates with heaps of hot, oven-baked kale chips (WF had organic kale at 3 bunches for $5, win!)
Daily steps: Wah, wah. Barely cleared 6k, thanks to needing to sort out my prior computer issues, plus a couple evening meetings that kept me on my butt.
