Confession : I love Mondays. Monday mornings in particular; they are just so full of potential and possibility. I was always that kid who loved getting fresh notebooks and pencils at the beginning of each school year (I cannot, however, confirm my level of follow-through on school assignments, hahaha!).
Breakfast: Two hardboiled eggs, a mug of bone broth (yep, this is what happens when you don’t food prep on Sunday)
Lunch: Taco salad bowl with cilantro cauliflower rice. This was all combined from different leftover sand some freshly chopped veggies, so perfect for a busy Monday.
Dinner: A fantastic tenderloin from a local rancher (sorry, too dark for pics after cooking!) served with roasted garlic parsnip mash (recipe in the 21DSD book, really good) and simple green salad.
