Smooth sailing through Day 2. I’m sure that the prep work from Sunday has helped, since I had breakfast ready to go and just needed to steam some veggies to round out my lunch. It’s been chilly here, so I drank way too much hot tea and by the evening I started to get a little craving for something that wasn’t water or tea… you know, something like a dessert. Here’s the meal breakdown:
Lunch: Roast chicken leg and thigh, broccoli and a big scoop of homemade mayo for dipping (for the record, I NEVER liked mayo until I started making it myself, now I use it all the time, as a sauce or as a base for dressings).
Dinner: Spaghetti Squash Bolognese ~ I had planned this knowing we’d be having a rainy days and it is so warm and comforting. The sauce is another 21-Day Sugar Detox recipe, and I made the spaghetti squash in my new InstantPot, following these directions from Michelle Tam at NomNomPaleo (really, it cooked in seven minutes. S E V E N.) I added a very simple salad of arugula, walnuts, and my favorite homemade green dressing.
Late Snack: After dinner I was still up for a while, and I started feeling those sneaky sugar cravings. I went with 1/2 a green apple and some almond butter and was totally happy.
