Breakfast: You guys. I’m so boring. Brisket, 2 cups of slaw, extra sauce. A dish of raw carrots, because I’m craving crunch and can’t keep going through a cup of Banola a day. Ha!
Lunch: I am still so boring. Got those fermented veggies in, though!
Dinner: This was a labor of love. I made a slightly adapted version of the Chicken Carbonara Casserole from the fantastic Juli Bauer’s Paleo Cookbook. I have made her Almost 5-Ingredient Pizza dish about 100 times, so thought this would be just as easy. Yeah, not so much. Of course, if I had prepped ahead, or not needed to roast the squash, and the whole chicken and … well, I think I made this more complicated than necessary >.<. It was good though, and since it’s an all in one dish, I just had to serve a simple green salad on the side.
Daily Steps: 8838. Interesting, 8000 was hard for me to meet two weeks ago, and now I am meeting that old goal – even though I’ve hard a hard time reaching my new 10k goal. Hopefully 10k steps becomes a more natural habit soon, and then I can bump it up again!
